Moroccan style potato omelette

Serves 4

Ingredients

  • 360g potatoes, cut into dice sized cubes
  • 1 onion, chopped
  • 3 tbsp olive oil
  • 2 cloves garlic, chopped
  • 4 eggs
  • 1 tsp harass
  • 1 bunch coriander and parsley, finely chopped
  • salt, to taste

This is great with a salad for a quick supper you can use leftover potatoes if you want too.

Method

  1. Add the potatoes to a pan of boiling salted water and cook until tender drain
  2. Meanwhile add 2 tbsp of the olive oil to a saucepan over low heat. Add the potatoes then stir-in the onions and garlic and cook slowly until the onion softens. Remove the mixture from the heat.
  3. Beat the eggs with the harissa in a bowl. Add the herbs and salt and whisk lightly.
  4. Mix the egg mixture with the potato mixture. Heat the remaining oil on low heat in a heavy frying pan then add the egg and potato mixture and cook over a very low heat until the bottom has set. Brown the top under a hot grill and serve.
