Potatoes with onion stock and bacon

serves 4

Ingredients

  • 900g potatoes
  • 1 medium onion chopped
  • 25g butter
  • 115g streaky bacon chopped
  • 350ml vegetable stock
  • salt/pepper

Method

  1. Preheat oven to 200°C
  2. Peel the potatoes and cut into even chunks.Place in cold water.
  3. Melt the butter in a frying pan,add the chopped onion,stir and cover cook until they are soft.
  4. add the chopped bacon and cook for a couple of minutes
  5. Place the onion mixture into the base of a 1.5 litre oven proof dish.Lay over the potatoes and pour the stock over. Cook for
  6. 1hour,until golden brown.
  7. Serve
