Potatoes with onion stock and bacon
serves 4
Ingredients
- 900g potatoes
- 1 medium onion chopped
- 25g butter
- 115g streaky bacon chopped
- 350ml vegetable stock
- salt/pepper
Method
- Preheat oven to 200°C
- Peel the potatoes and cut into even chunks.Place in cold water.
- Melt the butter in a frying pan,add the chopped onion,stir and cover cook until they are soft.
- add the chopped bacon and cook for a couple of minutes
- Place the onion mixture into the base of a 1.5 litre oven proof dish.Lay over the potatoes and pour the stock over. Cook for
- 1hour,until golden brown.
