Ready to Roast Carrot and Roquefort Salad
Recipe serves four as a starter, or two for a main dish.
Ingredients
- 1 pack of ready to roast carrots
- 100g Roquefort
- 25g walnuts
- 2 little gem lettuce
- For the dressing
- 1 tablespoon white wine vinegar
- 6 tablespoons light olive oil
- Salt/pepper to taste
Method
- Preheat oven to gas mark 7/220°C/425°F.
- Place Inspire Ready to Roast carrots on a baking tray and roast 35 minutes or until cooked and slightly browned.
- Meanwhile make the dressing,mix the oil and vinegar together whisk and season to taste.
- Wash the lettuce and dry the leaves,add the dressing and walnuts and arrange on a serving dish.
- Remove the carrots, arrange over the lettuce leaves, and crumble the Roquefort over the carrots.
- Serve immediately.
