Ready to Roast Carrot and Roquefort Salad

Recipe serves four as a starter, or two for a main dish.

Ingredients

  • 1 pack of ready to roast carrots
  • 100g Roquefort
  • 25g walnuts
  • 2 little gem lettuce
  • For the dressing
  • 1 tablespoon white wine vinegar
  • 6 tablespoons light olive oil
  • Salt/pepper to taste

Method

  1. Preheat oven to gas mark 7/220°C/425°F.
  2. Place Inspire Ready to Roast carrots on a baking tray and roast 35 minutes or until cooked and slightly browned.
  3. Meanwhile make the dressing,mix the oil and vinegar together whisk and season to taste.
  4. Wash the lettuce and dry the leaves,add the dressing and walnuts and arrange on a serving dish.
  5. Remove the carrots, arrange over the lettuce leaves, and crumble the Roquefort over the carrots.
  6. Serve immediately.
